Experiencing Din Tai Fung: A Culinary Journey
Discovering Din Tai Fung in Seattle
Before planning my trip to Seattle for a K-pop concert, I had never heard of Din Tai Fung. While preparing for the trip, I joined a Facebook group of fellow fans attending the same concert. Several of us thought it would be wonderful to meet in person and share a meal together, which led us to Din Tai Fung. Although I have enjoyed good Asian cuisine before, Din Tai Fung offered flavors and experiences unlike anything I had previously tasted. The restaurant specializes in Taiwanese-style dishes.
First Impressions and Unique Dining Experience
Despite having a reservation, our party of fifteen ended up waiting outside the restaurant, which shows just how popular Din Tai Fung is. Once inside, we were presented with menus that differed from those at typical restaurants. Instead of traditional menus, Din Tai Fung uses a list format, allowing guests to read brief descriptions and simply check off the items they wish to order. Each person at our table picked a dish, and we share everything family-style, just like the restaurant usually serves its food.
The servers took our orders, brought out drinks--such as the delicious honey lemon green tea--and delivered food as soon as it was prepared. This method ensured that everything was served hot and fresh. The restaurant opened a 19-table Taiwanese eatery in a Los Angeles strip mall 25 years ago. Din Tai Fung currently operates 17 locations across the United States, in addition to numerous establishments internationally.
According to Crane, each U.S. location generates $27.5 million in annual revenue--far exceeding the earnings of many other restaurants.
This achievement is attributed to Din Tai Fung's emphasis on premium quality, consistent taste, and exceptional customer experience. Albert Yang, one of the leaders, explains, "Culinary quality, excellent service and dialed-in efficiency are what drive the chain's decisions. Profit just follows if you do the right things." The chain has opened more than a dozen new restaurants this year and plans to continue expanding in 2026.
Quality Control and Social Media Strategy
Fans eagerly track Din Tai Fung's new openings much like sports enthisiasts follow NBA or NFL trades. However, the restaurant chain resists franchising offers to maintain strict quality control, which is the main reason they will most-likely never go public. Albert Yang and his brother Aaron Yang, who oversees real estate and sits on the family board, took charge of the American business in 2021, separate from international operations.
The Yang focus' intensively on data and guest feedback with his team, monitoring reviews on Yelp and Google. While Facebook and Instagram are rarely used, TikTok is used mostly by guests sharing desserts and xiao long bao videos that some have received millions of views. Albert Yang notes that four out of five guests first heard about Din Tai Fung on TikTok. This approach to earned media has proven effective, driving significant revenue for the chain. Word-of-mouth remains a reliable strategy, though expanding marketing efforts on platforms like Instagram and Facebook could further highlight the chef's skills and signature dishes.
Din Tai Fung in Oregon and Personal Recommendation
Further research revealed that Din Tai Fung operates two restaurants in Oregon--one at Pioneer Place in Portland and another at Washington Square in Tigard. Based on my first experience, I look forward to visiting one of these locations to try new dished as well as revisiting old favorites.
